Crockpot Chicken Zoodle Soup
1 lb Boneless skinless chicken breasts (2-3 large if using frozen)

3 stalks Celery, chopped (about 1 cup diced)
3 medium Carrots, peeled and chopped (about 1 cup)
1/2 small Onion, diced
1/2 tsp Garlic powder
1/2 tsp Poultry seasoning (or 1/4 tsp thyme and 1 bay leaf)
6 cups Chicken stock
2 medium or 1 large Zuchinni, spiralized (about 4 cups)
The estimated total time to make this recipe is 4-8 hours.
Add everything to crockpot except for the zucchini. Cover and cook on high for 4 hours, or on low for 6-8 hours, or until chicken is cooked through and easy to shred.
In the last 15-30 minutes of cooking (depending on how tender you want the zucchini noodles), remove chicken breasts. Shred chicken breasts, and add back to crockpot along with the zucchini noodles. Cover and continue to cook until zucchini is cooked to your liking. Season with salt, pepper, and parsley if desired. Enjoy!
