Roasted Pineapple & Ham Quinoa Salad
Roasted Pineapple & Ham Quinoa Salad is an easy recipe using up leftover ham with the perfect combination of sweet, salty and smokey flavors. Crunchy quinoa and oven roasted pineapple and ham are tossed with a Light Honey Dijon Vinaigrette for an easy 5 ingredient salad.
- 2 c. leftover ham, trimmed and cubed
- 1½ c. roasted pineapple, diced
- ⅓ c. green onion, diced
- 2 c. cooked quinoa
- ⅓ c. Light Honey Dijon Vinaigrette
- Toss all of the ingredients in a large bowl with the vinaigrette until well coated. Serve immediately or store refrigerated.
