Sesame Chicken Salad with Cranberries

⦁ 1 cups chicken breast, toasted and chopped
⦁ 1 teaspoon Sesame seeds, white
⦁ 2 teaspoons Garlic powder, or crushed garlic
⦁ 1 cup apple, chopped or diced
⦁ ¼ cup pitted cranberries
⦁ 1 large slice pineapple, chopped
⦁ 2 stalks celery, chopped
⦁ 1 cup lettuce leaves, roughly chopped
⦁ ½ cup red bell peppers, sliced
⦁ ½ cup yellow bell peppers, sliced
⦁ ½ cup red carrots, peeled and sliced
⦁ ½ cup sun-dried tomatoes
⦁ 2 teaspoons lemon juice
⦁ Salt and freshly grounded black pepper, as per taste
⦁ 2 tablespoons mayonnaise, light
⦁ Dash of milk froth
⦁ Salt and black pepper, as per taste
⦁ Pre-heat the oven to 400 degrees F. Rub some sesame seeds, salt, pepper and garlic powder over the chicken and place it in the oven.
⦁ Toast the chicken for 15-20 minutes, till is cooked through. Once done, let it cool and shred it in thin slices.
⦁ Place the chicken, apples, cranberries and pineapples in a large mixing bowl. Add the celery, lettuce, bell peppers and carrots and mix them well.
⦁ Sprinkle some tomatoes, lemon juice, salt, pepper and stir in the yogurt.
⦁ Add in the mayonnaise and mix everything well. Spread over a serving dish, garnish with some milk froth and sesame seeds and serve.
