Sweet and sour chicken salad

⦁ 200 grams chicken breasts, broiled and shredded
⦁ 1 cup salad greens
⦁ 1 cup iceberg lettuce, roughly cut
⦁ 1 cup corn kernels, fresh
⦁ 1 cup sun-dried tomatoes
⦁ 2 teaspoons extra-virgin olive oil
⦁ 1/2 teaspoon all-purpose Thai seasoning (or a combination of dried oregano, basil and thyme)
⦁ 2 tablespoons lemon juice
⦁ 1 tablespoon Red Wine Vinegar, Organic
⦁ Salt and black pepper, as per taste
⦁ Pre-heat the oven at 400 degrees F. Rub the chicken with some salt and pepper and place it in the oven to broil for 15 minutes.
⦁ In a large mixing bowl, combine the salad greens, lettuce, corn, tomatoes and vinegar.
⦁ Once the chicken has broiled, shred it into pieces and add to the mixing bowl.
⦁ Pour some olive oil and lemon juice and sprinkle some seasoning on top. Toss it well and serve.
