Buffalo Chicken Sloppy Joes

1 tsp. olive oil
1/4 onion, diced
2 celery ribs, chopped
2 carrots, peeled and chopped
1 lb. 93% lean ground chicken
1/4 cup tomato sauce
1/3 cup buffalo sauce (more to taste)
1/2 tsp. cumin
1/2 tsp. garlic powder
Salt and pepper


  1. Heat olive oil over medium heat. Add the onion, celery, and carrots and cook for 4-6 minutes until they begin to soften.
  2. Add the chicken and cook for 6-8 minutes until completely cooked through and beginning to brown.
  3. Stir in the tomato sauce, buffalo sauce, cumin, and garlic powder. Season with salt and pepper. Let simmer for 3-5 minutes until sauce thickens.
