Caramelized Red Onion and Sweet Potato Frittata

1 tablespoons of organic unrefined coconut oil
½ cup of diced red onion
½ cup of left over Savory Roasted Sweet Potato’s
4 organic pasteurized eggs scrambled




1. Preheat oven to 350°F. In a cast-iron skillet over medium heat, add coconut oil and red onion.
2. Saute for 8-10 minutes or until translucent.
3. Add sweet potato and warm through completely about 5 minutes.
4. Add whisked eggs to the skillet and place in the oven to bake for about 10 minutes. Serve and enjoy!
