This is the best dish for a picnic or a meal with people.
For the fritters you need:
- 1 big zucchini
- 1 garlic clove
- ¼ cup basil fresh
- ¼ cup oregano
- 1 tbsp lemon zest
- 2 eggs or flax egg
- ¼ cup gluten free flour
- ¼ tsp onion powder
- 1 tsp salt
- ¼ tsp pepper
For the dip you need:

- ½ cup chopped dill
Get big holes box grater and grate the zucchini. Put the zucchini in colander in a sink and toss the salt. After 10 min, wring dry zucchini in a towel to get excess moist. Put them in a bowl and mix in the egg. Add basil, oregano, lemon zest, onion, pepper, salt and garlic. Mix and add the flour.
Heat up 2 tbsp coconut oil and saute this on medium heat. Then when this sizzles, drop of the mix and fry it. Drop 2 tbsp zucchini mix and space the pieces apart.
Cook until golden, 2-3 minutes, lower the heat and turn the pieces. Cook few minutes more. Put them in a plate.
For more veggies, add 12 cup chopped kale or spinach.
