Coconut oil chocolate truffles
These truffles are loved by everyone and can be a good gift too. This is vegan, gluten-free and with all the benefits of coconut like lauric acid and medium chain fats.
Serves: 24 truffle pieces
Prep time: 2 and ½ hours
- 12 oz sugarless dark chocolate
- ¼ cup Nutiva coconut oil
- ¾ cups coconut milk or coconut cream, full fat
- 1 tsp vanilla extract, alcohol-free
- ¼ tsp sea salt
- Stevia, maple syrup or honey
For coating you need:
½ cup cocoa powder or flakes or silvered almonds
With a double boiler, melt the chocolate and coconut oil. Stir and add the coconut milk. Now whisk to make it smooth.
Remove aside from heat, add salt, vanilla and sweetener by choice.
Let it cool for 2 hours. Get a spoon, scoop spoonful, roll it in a ball and in the coating you chose.
Refrigerate the truffles and chill them for 10 min, serve then.
Keep them in the fridge.
